This spunky mocktail combines the tartness of limes and raspberries with the cool sweetness of a cucumber mint syrup, finished with the bubbly brightness of LaCroix Black Razzberry. Ingredients
- 2 tbsp freshly squeezed lime juice
- 4 fresh raspberries
- 3 sprigs mint, divided
- 1/3 can LaCroix Black Razzberry
- 1 tbsp cucumber-mint syrup
- 1 slice Persian cucumber, for garnish
- 2 tbsp agave
- 2 tbsp water
- 1 sprig mint
- 2 tbsp cucumber, deseeded and roughly chopped
Instructions
- Make the cucumber mint syrup by adding agave, water, 1 sprig of mint, and cucumber to a small saucepan. Cook over medium heat until the syrup is infused and reduced, about 10 to 15 minutes. Strain through a fine sieve, transfer to the freezer, and chill for at least 10 minutes.
- Muddle raspberries and 1 sprig of mint in a small pitcher.
- Add lime juice, 1 tbsp cucumber-mint syrup, and LaCroix Black Razzberry to the pitcher.
- Stir well to combine.
- Pour the mocktail into a highball glass and garnish with a round of cucumber and a sprig of mint.
