Ingredients

  • 2 ounces London dry gin
  • 1/2 ounce yuzu juice
  • 3/4 ounce simple syrup
  • 1 ounce aquafaba (or egg whites)
  • 4 Thai basil leaves
  • Peychaud's bitters

Instructions

  1. In a shaker, muddle Thai basil leaves with simple syrup.
  2. Add London dry gin, yuzu juice, and aquafaba to the shaker.
  3. Dry shake the ingredients for about 10 seconds.
  4. Add 3 ice cubes to the shaker and shake vigorously for another 10 seconds.
  5. Strain the cocktail into a rocks glass filled with ice.
  6. Top the cocktail with soda until the foam rises slightly above the glass's edge.
  7. Garnish with a Thai basil leaf and a few drops of Peychaud's bitters.
