Ingredients

  • 1 large egg
  • 2 tablespoons granulated sugar
  • 1/3 cup whole milk
  • 2 tablespoons heavy whipping cream
  • 1/8 - 1/4 teaspoon freshly grated nutmeg
  • 1/8 teaspoon vanilla extract
  • 2-3 tablespoons bourbon (optional)

Instructions

  1. Separate the egg white from the yolk. Place the yolk in a medium mixing bowl and set the white aside.
  2. Add sugar to the egg yolk and whisk vigorously until the mixture becomes pale yellow and fluffy. Set aside.
  3. In a medium saucepan, heat the milk, whipping cream, and 1/8 teaspoon of freshly grated nutmeg over medium heat until it almost boils.
  4. Remove from heat and slowly add a ladle of the hot milk mixture to the egg mixture, whisking vigorously. Continue adding hot milk until most of it has been incorporated.
  5. Return the mixture to the saucepan and heat over medium, stirring constantly, until it thickens. Do not let it boil; the temperature should not exceed 160°F.
  6. Remove from heat, stir in the vanilla extract and bourbon, if using. Cover with plastic wrap and refrigerate for at least 1 hour before serving. Garnish with freshly grated nutmeg.
