Ingredients
- 1 large egg
- 2 tablespoons granulated sugar
- 1/3 cup whole milk
- 2 tablespoons heavy whipping cream
- 1/8 - 1/4 teaspoon freshly grated nutmeg
- 1/8 teaspoon vanilla extract
- 2-3 tablespoons bourbon (optional)
Instructions
- Separate the egg white from the yolk. Place the yolk in a medium mixing bowl and set the white aside.
- Add sugar to the egg yolk and whisk vigorously until the mixture becomes pale yellow and fluffy. Set aside.
- In a medium saucepan, heat the milk, whipping cream, and 1/8 teaspoon of freshly grated nutmeg over medium heat until it almost boils.
- Remove from heat and slowly add a ladle of the hot milk mixture to the egg mixture, whisking vigorously. Continue adding hot milk until most of it has been incorporated.
- Return the mixture to the saucepan and heat over medium, stirring constantly, until it thickens. Do not let it boil; the temperature should not exceed 160°F.
- Remove from heat, stir in the vanilla extract and bourbon, if using. Cover with plastic wrap and refrigerate for at least 1 hour before serving. Garnish with freshly grated nutmeg.
