Ingredients

  • 2 tablespoons heavy cream
  • 1 large egg yolk
  • 1 tablespoon sugar
  • 1/2 cup whole milk
  • A pinch of salt
  • 1 tablespoon dark rum
  • A pinch of ground nutmeg, plus extra for serving

Instructions

  1. In a bowl, whisk together 2 tablespoons of cream, egg yolk, and sugar until smooth and pale yellow.
  2. Simmer the milk and salt in a saucepan, then slowly pour it into the yolk mixture, whisking constantly.
  3. Return the mixture to the saucepan and cook over medium-low heat until it reaches 160 degrees, stirring constantly.
  4. Transfer the eggnog to a clean bowl, stir in the rum and nutmeg, then place the bowl in an ice bath and refrigerate until it reaches 40 degrees.
  5. Whip the remaining cream until soft peaks form, then fold it into the chilled eggnog.
