Watermelon Mint Freeze Mojito

Ingredients
- 1 cup seedless watermelon, cubed
- 2 fl oz Lemon lime soda
- 1 tbsp fresh lime juice
- 1/4 tsp Rum extract
- 1/2 tbsp fresh mint, minced
Instructions
- Puree the watermelon in a blender to make about 6 cups of puree.
- Pour 2 cups of puree into an ice cube tray (16 cubes); freeze until solid (several hours or overnight). Keep the remaining 2 cups of watermelon puree in the refrigerator.
- When ready to make the mocktail, place one tray of watermelon puree cubes, 1 cup refrigerated watermelon puree, 1 cup soda, 6 tbsp lime juice, and 1 tbsp rum extract in a blender; blend until smooth.
- Stir in 1 1/2 tbsp of fresh mint and pour into a glass. Garnish with additional fresh mint if desired.
