Ingredients

  • 1 oz mezcal
  • 1 oz ume (plum wine)
  • 1 small pitted ume plum
  • 2 tsp simple syrup
  • 1 dropper (about 0.75-1.5 mL) CBD oil or tincture (optional)
  • 3/4 oz lime juice
  • 1/4 oz rice vinegar (or additional lime juice)
  • 1 tsp egg white or 1 oz aquafaba (canned chickpea water for vegans)
  • Splash of club soda for topping
  • Matcha powder for garnish
  • Green herb like mint for optional garnish

Instructions

  1. In a cocktail shaker, muddle the plum until it becomes pulpy.
  2. Add a handful of ice, mezcal, ume wine, simple syrup, CBD oil or tincture, lime juice, rice vinegar, and egg white.
