Ingredients

  • 1/8 cup Sugar or baking stevia
  • 1/2 cup water
  • 1/8 cup mint leaves
  • 1.50 oz white rum
  • 1/2 cup canned light coconut milk
  • Juice of 1/2 Lime
  • 1 cup ice
  • Garnish: mint leaves, toasted coconut flakes (optional)

Instructions

  1. In a small saucepan, combine sugar or baking stevia, water, and mint leaves. Bring to a boil, then let simmer for 10 minutes. Strain the mint and reserve the simple syrup. Allow it to cool.
  2. In a high-powered blender, combine the rum, coconut milk, lime juice, reserved mint simple syrup, and ice.
  3. Blend until smooth and creamy.
  4. Pour the frozen mojito into a cocktail glass.
  5. Garnish with mint leaves and toasted coconut flakes if desired.
  6. Serve immediately.
