Ingredients

  • 1 cup fresh ginger, peeled and thinly sliced
  • 1 cup dark brown sugar
  • 1 cup water
  • 3 oz dark spiced rum
  • 1 oz ginger syrup
  • 1 lime wedge
  • Sparkling seltzer water
  • Ice

Instructions

  1. In a saucepan, combine fresh ginger, dark brown sugar, and water.
  2. Simmer the mixture for about 35 minutes until the sugar is dissolved and the syrup is thickened.
  3. Strain out the ginger slices and allow the syrup to cool to room temperature.
  4. In a short cocktail glass, add ice.
  5. Pour in the dark spiced rum and ginger syrup.
  6. Squeeze the lime wedge into the glass.
  7. Top the cocktail with sparkling seltzer water and stir to combine.
  8. Garnish with a lime wedge and, if available, leftover ginger slices.
