Ingredients
- 1 cup fresh ginger, peeled and thinly sliced
- 1 cup dark brown sugar
- 1 cup water
- 3 oz dark spiced rum
- 1 oz ginger syrup
- 1 lime wedge
- Sparkling seltzer water
- Ice
Instructions
- In a saucepan, combine fresh ginger, dark brown sugar, and water.
- Simmer the mixture for about 35 minutes until the sugar is dissolved and the syrup is thickened.
- Strain out the ginger slices and allow the syrup to cool to room temperature.
- In a short cocktail glass, add ice.
- Pour in the dark spiced rum and ginger syrup.
- Squeeze the lime wedge into the glass.
- Top the cocktail with sparkling seltzer water and stir to combine.
- Garnish with a lime wedge and, if available, leftover ginger slices.
