Ingredients
- 2 tbsp long grain white rice
- 1 cup water
- 1 cinnamon stick
- 1.25 oz pumpkin puree
- 1/4 cup coconut cream
- 1 tbsp brown sugar
- 1/8 tsp pumpkin pie spice
- 1/4 tsp vanilla
- 1 oz rum
Instructions
- In a blender, combine the long grain white rice and water until the rice is finely ground.
- Add the cinnamon stick and additional water, then refrigerate for 24 hours.
- Remove the cinnamon stick and strain the rice through a cheesecloth into a large pitcher.
- In a medium saucepan, combine the pumpkin, coconut cream, brown sugar, pumpkin pie spice, and vanilla over low heat until smooth.
- Add the pumpkin mixture to the rice milk and stir well.
- Strain the mixture through a cheesecloth if desired, then stir in the rum.
- Garnish with a cinnamon stick for stirring.
