Ingredients

  • 1/4 cup granulated sugar
  • 1 small bunch of rosemary (approx. 0.9 oz)
  • 2 tablespoons lemon juice (from approx. 1 lemon)
  • 1/4 cup gin
  • 1 egg white
  • Lemon zest twist, for garnish
  • Ice

Instructions

  1. In a small saucepan, dissolve the sugar in 1/2 cup of water over medium heat.
  2. Strip half of the rosemary leaves and add them to the sugar water, then simmer for 3 minutes.
  3. Remove the saucepan from the heat and allow the mixture to cool completely, then strain to remove the rosemary.
  4. In a cocktail shaker, combine half of the cooled rosemary syrup, half of the lemon juice, gin, and an egg white.
  5. Shake vigorously for 1 minute, then add a generous amount of ice and shake again until the shaker feels very cold.
  6. Strain the mixture into a coupe glass and garnish with a twist of lemon zest and a sprig of the remaining rosemary.
  7. Repeat the process for the remaining serving.
  8. The leftover rosemary syrup can be stored in the fridge for up to 2 weeks.
