Ingredients
- 1.50 oz caster sugar
- 0.50 oz fresh rosemary leaves
- 0.50 oz lemon juice
- 2 oz gin
- 1 egg white
- Twist of lemon zest, for garnish
- Sprig of rosemary, for garnish
Instructions
- In a small saucepan, combine the caster sugar and 2 tablespoons of water. Heat over medium heat, stirring occasionally, until the sugar is dissolved.
- Add the fresh rosemary leaves to the saucepan and simmer for 3 minutes, then remove from the heat and let it cool completely. Once cooled, strain the syrup to remove the rosemary leaves.
- In a cocktail shaker, pour in the rosemary syrup, lemon juice, gin, and the egg white.
- Shake vigorously for about a minute, then add a handful of ice and shake again until the shaker becomes very cold.
- Strain the cocktail into a coupe glass and garnish with a twist of lemon zest and a sprig of rosemary.
- Repeat the process for additional servings.
