Ingredients

  • 1.50 oz caster sugar
  • 0.50 oz fresh rosemary leaves
  • 0.50 oz lemon juice
  • 2 oz gin
  • 1 egg white
  • Twist of lemon zest, for garnish
  • Sprig of rosemary, for garnish

Instructions

  1. In a small saucepan, combine the caster sugar and 2 tablespoons of water. Heat over medium heat, stirring occasionally, until the sugar is dissolved.
  2. Add the fresh rosemary leaves to the saucepan and simmer for 3 minutes, then remove from the heat and let it cool completely. Once cooled, strain the syrup to remove the rosemary leaves.
  3. In a cocktail shaker, pour in the rosemary syrup, lemon juice, gin, and the egg white.
  4. Shake vigorously for about a minute, then add a handful of ice and shake again until the shaker becomes very cold.
  5. Strain the cocktail into a coupe glass and garnish with a twist of lemon zest and a sprig of rosemary.
  6. Repeat the process for additional servings.
