Ingredients

  • 2/3 cup blanched almonds
  • 1.50 cups granulated sugar
  • 6 cups whole milk
  • 2 cinnamon sticks
  • 1 lemon rind
  • 1 tsp pure vanilla extract
  • 1/4 tsp baking soda
  • 8 large egg yolks
  • 1 cup white rum or aguardiente

Instructions

  1. In a food processor, pulse almonds and 2 tablespoons of sugar until finely ground.
  2. In a large saucepan, bring milk, cinnamon, lemon rind, vanilla, and baking soda to a boil, then simmer for 15 to 20 minutes. Set aside.
  3. In a large bowl, whisk egg yolks, remaining sugar, and ground almonds until thick and pale.
  4. Remove cinnamon and lemon rind from the milk mixture, then slowly add the milk to the yolk mixture while whisking constantly.
  5. Return the mixture to the pan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, about 5 to 7 minutes.
  6. Allow the mixture to cool completely, about 2 hours, then stir in the rum or aguardiente. Serve and enjoy!
