Raspberry Rose Petal Fizz

Ingredients
- 3 oz sparkling water
- 1 egg white
- 1 1/2 oz. gin
- 3/4 oz lemon juice (about 1/4 of a lemon)
- 3/4 oz raspberry syrup
- 3 drops rose water
- Rose petal for garnish
- Ice
Instructions
- For the syrup, combine water and sugar in a saucepan over medium heat until sugar dissolves. Add raspberries, bring to a boil, then remove from heat and let it cool. Strain the mixture through a fine mesh sieve, pressing to extract all the juice.
- Pour sparkling water into a highball glass with ice.
- In a cocktail shaker, vigorously shake the egg white until foamy.
- Add gin, lemon juice, raspberry syrup, and rose water to the shaker and shake vigorously for 30 seconds.
- Pour the mixture into the glass and garnish with a rose petal.
