Ingredients

  • 3 oz sparkling water
  • 1 egg white
  • 1 1/2 oz. gin
  • 3/4 oz lemon juice (about 1/4 of a lemon)
  • 3/4 oz raspberry syrup
  • 3 drops rose water
  • Rose petal for garnish
  • Ice

Instructions

  1. For the syrup, combine water and sugar in a saucepan over medium heat until sugar dissolves. Add raspberries, bring to a boil, then remove from heat and let it cool. Strain the mixture through a fine mesh sieve, pressing to extract all the juice.
  2. Pour sparkling water into a highball glass with ice.
  3. In a cocktail shaker, vigorously shake the egg white until foamy.
  4. Add gin, lemon juice, raspberry syrup, and rose water to the shaker and shake vigorously for 30 seconds.
  5. Pour the mixture into the glass and garnish with a rose petal.
