Ingredients

  • 1 egg yolk
  • 3 tbsp heavy cream
  • 2.50 tbsp milk
  • 1.33 tbsp sugar
  • 0.75 tbsp canned pumpkin
  • 2 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • Freshly grated nutmeg
  • 5 oz bourbon

Instructions

  1. In a large saucepan, combine egg yolk, 1 tbsp cream, 1 tbsp milk, and sugar. Cook and stir over medium heat for about 5 minutes, until the mixture coats a spoon.
  2. Strain the mixture into a pitcher and stir in the remaining cream, milk, pumpkin, vanilla, and pumpkin pie spice.
  3. Place the pitcher in a bowl of ice water and stir for 2 minutes.
  4. Cover and chill the mixture in the refrigerator for 4 to 24 hours.
  5. Pour the chilled mixture into a glass and add bourbon, using a 5-to-1 ratio of eggnog to bourbon.
  6. Top the cocktail with freshly grated nutmeg.
