Ingredients

  • 6 large eggs
  • 1 lime peel
  • 6 (14 oz.) cans condensed milk
  • 2 (12 oz.) tins evaporated milk
  • 3-4 dashes Angostura bitters
  • 3 cups rum
  • 1/2 tsp freshly grated nutmeg
  • 1/2 tsp freshly grated cinnamon

Instructions

  1. Crack eggs into a large mixing bowl, one at a time, and remove the white membrane.
  2. Add the peel of a lime to the eggs and whisk until frothy using an electric mixer on low or a handheld whisk.
  3. Slowly pour in condensed milk while whisking vigorously, then add evaporated milk and the entire bottle of rum.
  4. Mix in freshly grated nutmeg and cinnamon thoroughly.
  5. Discard the lime peel and strain the mixture through a fine colander.
  6. Pour the mixture into sterile glass bottles for storage.
