Persimmon Sparkler
A sparkling cocktail featuring persimmon syrup, orange liqueur, lemon, and dry Champagne, garnished with rosemary and cranberry.
Ingredients
- 1 ripe Fuyu persimmon, diced (about 1/2 cup)
- 1/2 cup water
- Freshly grated nutmeg
- 1 sprig rosemary
- 1 cup brown sugar
- 1 oz orange liqueur (Grand Marnier)
- 1/2 oz persimmon syrup
- 1/4 oz fresh lemon juice
- 4 oz dry Champagne
- Small sprig of rosemary, for garnish
- 1 cranberry, for garnish
Instructions
- In a medium saucepan over medium heat, caramelize the diced persimmon for 5 to 10 minutes, stirring occasionally.
- Add water, rosemary, and freshly grated nutmeg to the saucepan and bring to a boil.
- Stir in the brown sugar until dissolved, then remove from heat, strain, and let the syrup cool.
- In a cocktail shaker with ice, combine the orange liqueur, persimmon syrup, and lemon juice. Shake well and strain into a Champagne flute or saucer.
- Top with dry Champagne and garnish with a sprig of rosemary and a cranberry.
