Ingredients

  • 1 ripe Fuyu persimmon, diced (about 1/2 cup)
  • 1/2 cup water
  • Freshly grated nutmeg
  • 1 sprig rosemary
  • 1 cup brown sugar
  • 1 oz orange liqueur (Grand Marnier)
  • 1/2 oz persimmon syrup
  • 1/4 oz fresh lemon juice
  • 4 oz dry Champagne
  • Small sprig of rosemary, for garnish
  • 1 cranberry, for garnish

Instructions

  1. In a medium saucepan over medium heat, caramelize the diced persimmon for 5 to 10 minutes, stirring occasionally.
  2. Add water, rosemary, and freshly grated nutmeg to the saucepan and bring to a boil.
  3. Stir in the brown sugar until dissolved, then remove from heat, strain, and let the syrup cool.
  4. In a cocktail shaker with ice, combine the orange liqueur, persimmon syrup, and lemon juice. Shake well and strain into a Champagne flute or saucer.
  5. Top with dry Champagne and garnish with a sprig of rosemary and a cranberry.
