Merry Eggnog Delight
A comforting and indulgent holiday eggnog recipe, rich in whole milk, egg yolks, and heavy cream, with warm hints of vanilla and nutmeg. Perfect for festive gatherings.
Ingredients
- 1 1/2 cups whole milk
- 1/16 teaspoon salt
- 2 large eggs, separated
- 3 1/2 tablespoons sugar, divided
- 1 cup heavy whipping cream
- 1/16 teaspoon ground nutmeg
- Bourbon, rum, brandy, or amaretto (optional)
- Garnish: ground nutmeg
Instructions
- In a large saucepan, heat the whole milk, vanilla bean, and salt over medium heat, without allowing it to boil.
- Beat the egg yolks with 1 cup of sugar until pale and ribbonlike in a large bowl.
- Slowly pour 2 cups of the hot milk mixture into the egg yolk mixture, mixing on low speed constantly.
- Pour the egg mixture into the pot of hot milk, whisking constantly. Add the heavy cream and cook until the mixture thickens and reaches 170°F.
- Remove from heat, discard the vanilla bean, and set aside. In a separate bowl, beat the egg whites and remaining sugar until stiff peaks form.
- Pour the milk mixture through a fine-mesh sieve into a large serving bowl. Carefully fold in the beaten egg whites and nutmeg.
- Ladle into punch cups or mugs, add spirits to taste (if desired), and garnish with nutmeg.
