Ingredients

  • 1 kale leaf (dinosaur or lacinato, rib removed)
  • 1 1/2 tablespoons lime juice
  • 1 1/2 tablespoons mandarin orange juice
  • 1/2 teaspoon fresh ginger, minced
  • 1/8 jalapeno pepper, seeds removed
  • 1/2 tablespoon maple syrup (or agave nectar)
  • 1/8 cup water
  • 1/8 cup mezcal
  • 1 cup large ice cubes
  • 1 jalapeno slice (optional garnish)
  • 1 baby kale leaf (optional garnish)

Instructions

  1. In a blender, combine kale, lime juice, mandarin orange juice, minced ginger, jalapeno, maple syrup, and water.
  2. Blend on low for 20 seconds, then on high for 40 seconds until the texture is consistent. Use a scraper to push down the ingredients if needed.
  3. Transfer the mixture to a cocktail shaker.
  4. Add mezcal and ice to the shaker, then close it.
  5. Shake vigorously for 15 seconds.
  6. Pour the mixture into a serving glass without straining out the ice.
  7. Serve immediately.
