Ingredients

  • 0.50 oz hibiscus simple syrup
  • 0.50 oz tequila blanco
  • 3 oz fresh lime juice
  • 3 mint leaves, plus extra for garnish
  • 2 oz dry sparkling rosé (such as Moët & Chandon Rosé)
  • Raspberry sorbet (for serving, optional)

Instructions

  1. In a cocktail shaker, combine the tequila, lime juice, 0.5 oz hibiscus syrup, and 3 mint leaves.
  2. Fill the shaker with ice, cover, and shake until the outside of the shaker is frosty, about 20 seconds.
  3. Strain the mixture into a Champagne flute.
  4. Gradually add the rosé, stopping 0.5" from the top of the glass.
  5. Optional: top the cocktail with a small scoop of raspberry sorbet if desired.
  6. Garnish with a mint sprig.
