Ingredients

  • 2 fresh pasteurized eggs
  • 3 tablespoons granulated sugar, divided
  • 3/4 cup heavy whipping cream
  • 1/2 cup whole milk
  • 2 tablespoons bourbon
  • 2 tablespoons Frangelico hazelnut liqueur
  • Freshly grated nutmeg for garnishing

Instructions

  1. Carefully separate the egg yolks and whites into separate bowls.
  2. In a large bowl, whisk the egg yolks with 3 tablespoons of sugar until pale.
  3. Warm the cream and milk in a saucepan over medium heat until steaming, then slowly whisk half of the mixture into the egg yolks.
  4. Transfer the mixture back into the saucepan and cook over medium heat, stirring frequently until it coats the back of a spoon.
  5. Strain the mixture into a bowl, then cool completely before whisking in the bourbon and Frangelico.
  6. Refrigerate the mixture for about 1 hour until chilled.
  7. In a separate bowl, beat the egg whites with the remaining sugar until soft peaks form, then whisk it into the chilled egg yolk and bourbon mixture.
  8. Refrigerate until chilled and stir just before serving. Sprinkle with freshly grated nutmeg.
