Ingredients
- 2 fresh pasteurized eggs
- 3 tablespoons granulated sugar, divided
- 3/4 cup heavy whipping cream
- 1/2 cup whole milk
- 2 tablespoons bourbon
- 2 tablespoons Frangelico hazelnut liqueur
- Freshly grated nutmeg for garnishing
Instructions
- Carefully separate the egg yolks and whites into separate bowls.
- In a large bowl, whisk the egg yolks with 3 tablespoons of sugar until pale.
- Warm the cream and milk in a saucepan over medium heat until steaming, then slowly whisk half of the mixture into the egg yolks.
- Transfer the mixture back into the saucepan and cook over medium heat, stirring frequently until it coats the back of a spoon.
- Strain the mixture into a bowl, then cool completely before whisking in the bourbon and Frangelico.
- Refrigerate the mixture for about 1 hour until chilled.
- In a separate bowl, beat the egg whites with the remaining sugar until soft peaks form, then whisk it into the chilled egg yolk and bourbon mixture.
- Refrigerate until chilled and stir just before serving. Sprinkle with freshly grated nutmeg.
