Grilled Watermelon Mint Smash
A delightful twist on the classic mint julep, the Grilled Watermelon Mint Smash combines fresh mint simple syrup and smoky grilled watermelon puree with bourbon for a refreshing and vibrant summer cocktail.
Ingredients
- 6-8 fresh mint leaves
- 1 1/2 tablespoons white granulated sugar
- 1 1/2 tablespoons filtered water
- 1/4 pound seedless watermelon, cut into cubes
- Crushed ice
- 1 1/2 fluid ounces bourbon
Instructions
- In a small saucepan, combine the fresh mint leaves, sugar, and water. Heat over medium-low heat until the mixture simmers slightly. Turn off the heat and let it steep for 1 hour. Strain the mixture, discarding the mint leaves, and transfer it to a small bowl.
- Grill the watermelon cubes on a hot charcoal grill for about 1 minute per side until they develop a dark red color and grill marks. Transfer them to a plate and let them cool slightly. Once cooled, chop the grilled watermelon and then puree it in a food processor or blender for about 10 seconds. Strain the watermelon puree to remove the pulp.
- Pack a cocktail glass with crushed ice. Pour the bourbon over the ice. Add a tablespoon or two of the mint simple syrup, followed by the watermelon puree. Stir gently and garnish with fresh mint leaves.
