Ingredients

  • 1/8 cup (30ml) water
  • 1/8 cup (25g) sugar
  • 5-6 small strawberries, quartered
  • 2 sprigs fresh thyme
  • 1/2 ounce (15ml) Strawberry-Thyme Syrup
  • 3/4 ounce (22ml) pisco
  • 3/4 ounce (22ml) Bonal
  • 3/4 ounce (22ml) fresh lemon juice
  • 3 ounces dry sparkling wine, chilled
  • Ice

Instructions

  1. In a small saucepan, combine water, sugar, strawberries, and thyme. Bring to a simmer over medium heat, stirring until the sugar dissolves. Simmer for about 30 minutes, stirring occasionally.
  2. Strain the mixture through a fine-mesh strainer to remove the solids. Let the syrup cool before using. It can be refrigerated for up to 1 week.
  3. In a small lidded pitcher or quart-size Mason jar, combine the Strawberry-Thyme Syrup, pisco, Bonal, and lemon juice to make the punch mix (you will have 22 ounces of the punch mix). Stir to combine. The mix can be used immediately or covered and refrigerated for up to 10 hours.
  4. To serve, fill a Collins glass with ice, add 3 ounces of sparkling wine and 2 3/4 ounces of the punch mix to each glass, and stir gently. Serve immediately.
