Ingredients

  • 1 large egg yolk (pasteurized)
  • 2 tablespoons sugar
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • Seeds from 1/4 of a vanilla bean
  • Pinch of salt
  • 1/3 cup heavy cream
  • 3/4 cup milk
  • 1/3 cup whipping cream
  • 1 teaspoon cream cheese
  • 1 tablespoon powdered sugar

Instructions

  1. Allow the egg to sit at room temperature for 30 minutes.
  2. In a mixing bowl, whisk together the egg yolk, sugar, cinnamon, nutmeg, and salt until well combined.
  3. In a heavy saucepan, heat the heavy cream, milk, vanilla extract, and vanilla bean seeds over medium to medium-high heat, stirring constantly until it reaches a soft boil, then reduce the heat to low.
  4. Slowly ladle a portion of the milk mixture into the egg mixture, whisking until well blended, repeating with another ladle of the milk mixture.
  5. Pour the egg mixture into the saucepan with the remaining milk mixture and cook the eggnog for 4 minutes while stirring constantly.
  6. Remove from the heat and let it cool. For best results, refrigerate overnight.
  7. For the topping: In a mixing bowl, blend the cream cheese and 2 tablespoons of heavy cream until smooth and creamy, then add the remaining heavy cream and powdered sugar. Use a stand mixer on low speed to combine the ingredients until well blended, then beat the whipping cream until stiff peaks form.
  8. Fill a glass 3/4 full with eggnog, add the whipped cream on top, and sprinkle cinnamon through a stencil for a festive touch.
