Ingredients
- 1 large egg yolk (pasteurized)
- 2 tablespoons sugar
- 1/8 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- Seeds from 1/4 of a vanilla bean
- Pinch of salt
- 1/3 cup heavy cream
- 3/4 cup milk
- 1/3 cup whipping cream
- 1 teaspoon cream cheese
- 1 tablespoon powdered sugar
Instructions
- Allow the egg to sit at room temperature for 30 minutes.
- In a mixing bowl, whisk together the egg yolk, sugar, cinnamon, nutmeg, and salt until well combined.
- In a heavy saucepan, heat the heavy cream, milk, vanilla extract, and vanilla bean seeds over medium to medium-high heat, stirring constantly until it reaches a soft boil, then reduce the heat to low.
- Slowly ladle a portion of the milk mixture into the egg mixture, whisking until well blended, repeating with another ladle of the milk mixture.
- Pour the egg mixture into the saucepan with the remaining milk mixture and cook the eggnog for 4 minutes while stirring constantly.
- Remove from the heat and let it cool. For best results, refrigerate overnight.
- For the topping: In a mixing bowl, blend the cream cheese and 2 tablespoons of heavy cream until smooth and creamy, then add the remaining heavy cream and powdered sugar. Use a stand mixer on low speed to combine the ingredients until well blended, then beat the whipping cream until stiff peaks form.
- Fill a glass 3/4 full with eggnog, add the whipped cream on top, and sprinkle cinnamon through a stencil for a festive touch.
