Ingredients
- 2 large egg yolks
- 1.50 tbsp sugar
- 1 cup whole milk
- Pinch of coarse salt
- 1/3 cup heavy cream
- 0.50 oz bourbon
- 0.50 oz dark rum
- 1/4 oz cognac
- Freshly whipped cream, for serving
- Freshly grated nutmeg, for serving
Instructions
- In a medium heatproof bowl, whisk together the egg yolks and sugar until the mixture becomes pale yellow and thick.
- In a medium saucepan, bring the whole milk and salt to a gentle simmer. Slowly pour the hot milk mixture into the yolk mixture while whisking constantly.
- Pour the yolk mixture back into the saucepan and cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
- Strain the mixture through a fine-mesh sieve into a large bowl and let it cool, stirring occasionally. Then add the cream, bourbon, rum, and cognac, cover, and refrigerate overnight.
- In a heatproof mixer bowl set over simmering water, whisk the remaining sugar and egg whites until the sugar dissolves and the mixture is warm. Remove from heat and beat with a mixer on high speed until stiff peaks form.
- Fold the egg whites into the eggnog mixture and pour into glasses. Top with whipped cream and sprinkle with nutmeg.
