Ingredients

  • 2 large egg yolks
  • 1.50 tbsp sugar
  • 1 cup whole milk
  • Pinch of coarse salt
  • 1/3 cup heavy cream
  • 0.50 oz bourbon
  • 0.50 oz dark rum
  • 1/4 oz cognac
  • Freshly whipped cream, for serving
  • Freshly grated nutmeg, for serving

Instructions

  1. In a medium heatproof bowl, whisk together the egg yolks and sugar until the mixture becomes pale yellow and thick.
  2. In a medium saucepan, bring the whole milk and salt to a gentle simmer. Slowly pour the hot milk mixture into the yolk mixture while whisking constantly.
  3. Pour the yolk mixture back into the saucepan and cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
  4. Strain the mixture through a fine-mesh sieve into a large bowl and let it cool, stirring occasionally. Then add the cream, bourbon, rum, and cognac, cover, and refrigerate overnight.
  5. In a heatproof mixer bowl set over simmering water, whisk the remaining sugar and egg whites until the sugar dissolves and the mixture is warm. Remove from heat and beat with a mixer on high speed until stiff peaks form.
  6. Fold the egg whites into the eggnog mixture and pour into glasses. Top with whipped cream and sprinkle with nutmeg.
