Ingredients

  • 1 egg yolk
  • 1 tbsp white sugar
  • 4 fl oz milk
  • 1.50 fl oz Baileys
  • 1/4 tsp vanilla bean paste
  • pinch of ground cinnamon
  • freshly grated nutmeg

Instructions

  1. Pour a small amount of brown sugar onto a plate. In a separate bowl, pour some milk. Dip the rim of the glass in the milk, then press it into the brown sugar to create a sugared rim.
  2. In a small bowl, beat the egg yolk and white sugar until fluffy and the sugar has fully dissolved in the yolk.
  3. In a cocktail shaker, combine the yolk and sugar mixture, milk, Baileys, and vanilla paste. Add a pinch of ground nutmeg and ground cinnamon to the mixture.
  4. Fill the shaker or glass with ice, then cover the shaker or stir the mixture until well combined and chilled.
  5. Strain the mixture into the prepared glass, grate fresh nutmeg on top, and add a dusting of cinnamon.
  6. Garnish with a cinnamon stick, and the Baileys Eggnog is ready to serve.
