Ingredients

  • 2 large egg yolks
  • 3/8 cup whole milk
  • 2 tbsp heavy cream
  • 3 tbsp real maple syrup
  • 1 cinnamon stick
  • 3/4 tsp vanilla extract
  • 1/2 tsp ground nutmeg
  • 1/4 tsp whole cloves
  • Pinch of salt
  • 3 tbsp Baileys Original Irish Cream

Instructions

  1. Beat the egg yolks until smooth and slightly lightened in color.
  2. In a medium saucepan, bring milk, heavy cream, maple syrup, cinnamon stick, vanilla extract, nutmeg, whole cloves, and a pinch of salt to a simmer over medium heat. Do not boil. Turn off the heat after the mixture simmers.
  3. Strain some of the cream mixture through a fine-mesh sieve into the egg yolks and whisk. Repeat until all of the milk mixture is incorporated.
  4. Stir in the Baileys. Cover and refrigerate overnight.
  5. For an optional frothy topping, whip the reserved egg whites until soft peaks form immediately before serving and use to top each glass. Sprinkle with ground cinnamon and nutmeg if desired. Enjoy!
