Ingredients

  • 3-4 dandelion greens leaves
  • 1-1.50 tbsp agave syrup
  • 1/4 cup water
  • Juice of 1 lime
  • 6 oz seltzer water
  • 1.50 oz white rum (optional)
  • Ice
  • Lime wedge for garnish

Instructions

  1. If desired, blanch the dandelion greens in boiling water for 30-45 seconds, then transfer to ice water to stop the cooking process and dry thoroughly.
  2. Remove the stems and roughly chop the dandelion greens.
  3. In a small saucepan, combine agave and water, simmer and then let cool to room temperature.
  4. Blend the dandelion greens and agave syrup until smooth using an immersion blender or food processor.
  5. Pour the puree through a fine mesh sieve over a bowl, pressing out the liquid with the back of a spoon.
  6. Juice the lime into a pitcher and add the lime rinds for extra flavor.
  7. Pour the dandelion puree and seltzer into the pitcher and adjust with additional lime juice or agave to taste.
  8. Add rum directly to the pitcher if desired, or keep separate for individual preferences.
  9. Serve over ice and garnish with a lime wedge.
