Ingredients

  • 3/8 cup Cape Cod Select premium frozen cranberries
  • 3/8 cup blueberries (fresh or frozen)
  • 2 tablespoons granulated sugar
  • 1/4 cup water
  • 1 1/4 fresh basil leaves
  • 1/4 bottle Prosecco

Instructions

  1. In a large pot, combine the cranberries, blueberries, sugar, and water. Simmer over medium heat until the sugar dissolves.
  2. Add the basil leaves to the mixture and let it cool for a few minutes.
  3. Using a blender or immersion blender, purée the berry mixture until smooth.
  4. Line a pie pan with parchment paper and pour the berry purée through a mesh strainer into the pan, discarding the solids.
  5. Freeze the mixture for two hours, then use a fork to rake the frozen parts to break up the ice. Continue to freeze for 6 hours, raking the frozen purée occasionally.
  6. Scoop the cran blueberry basil granita into a champagne flute and top with Prosecco. Serve immediately.
