Ingredients
- 1/4 cup half & half or light cream
- 1.50 tbsp sweetened condensed milk
- 1/4 tsp instant coffee crystals
- 1 large egg yolk
- 2 tbsp whiskey
- 1 tbsp rum
- 1/2 tbsp chocolate syrup
- 1/2 tsp vanilla extract
Instructions
- In a large heavy-bottomed pan over medium heat, combine half & half, sweetened condensed milk, and instant coffee crystals. Stir until the coffee crystals dissolve.
- In a separate bowl, whisk the egg yolk, then gradually add 4-5 ladles of the hot mixture into the egg yolk while whisking.
- Return the tempered egg mixture into the hot milk mixture and stir to combine. This tempers the egg, bringing it to temperature without overcooking.
- Bring the mixture to a high simmer and cook over medium heat for 2 minutes, stirring constantly. Turn off the heat.
- Add whiskey, rum, chocolate syrup, and vanilla extract, and stir to combine.
- Allow the mixture to cool at room temperature, then cover it with plastic wrap directly over the liquid and chill it in the refrigerator for at least 8 hours or overnight.
- Remove the plastic wrap and stir the mixture well. Pour the chilled mixture through a sieve into another pot or container to remove any egg particles or skin.
- Transfer to a bottle or container with a lid and keep refrigerated. It stores well in the refrigerator for up to 2 months. Enjoy the Choco-Rum Delight!
