Ingredients

  • 1 celery stalk, chopped
  • 2 tablespoons sugar
  • 1/2 teaspoon celery seeds
  • 3 tablespoons gin
  • 1 tablespoon fresh lemon juice
  • Seltzer or club soda
  • 1 celery heart stalk
  • 1 lemon wedge

Instructions

  1. In a medium saucepan, bring chopped celery, sugar, celery seeds, and 1/2 cup water to a boil.
  2. Reduce the heat and simmer until the celery is soft and the liquid is reduced by half, about 30-35 minutes.
  3. Strain the mixture through a fine-mesh sieve into a small bowl, pressing on the solids.
  4. Strain the celery syrup again, if desired, through a cheesecloth-lined sieve to make the liquid clearer.
  5. In a large pitcher, stir together gin, lemon juice, and 1/4 cup of the celery syrup.
  6. Pour the mixture into a glass filled with ice and top it off with seltzer.
  7. Garnish with a celery stalk and a lemon wedge.
