Ingredients

  • 2 tbsp salted butter (softened)
  • 1 tbsp powdered sugar
  • 1 tbsp light brown sugar (packed)
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp rum extract (or rum emulsion)
  • 1/4 cup vanilla ice cream (softened)
  • 1 cup boiling water
  • 1 cinnamon stick (for garnish (optional))

Instructions

  1. In a mixing bowl, combine softened butter, powdered sugar, light brown sugar, cinnamon, and nutmeg. Mix until fluffy, approximately 3-5 minutes.
  2. Turn off the mixer and add rum extract and softened vanilla ice cream to the bowl. Mix until the ingredients are well combined with only a few clumps, about 3-5 minutes.
  3. Transfer the buttered rum mixture to a large sealable container and freeze until firm, approximately 2-4 hours.
  4. When ready to serve, boil 1 cup of water. Scoop approximately 1/2 cup of the buttered rum mixture into a glass.
  5. Pour the boiling water over the mixture and stir well. Optionally, garnish each drink with a cinnamon stick for added flavor and as a stirring implement.
