Ingredients
- 2 oz. dark rum
- 1/2 oz. blackberry shrub syrup
- Club soda
- 2 cups blackberries
- 1 cup sugar
- 2 tbsp. balsamic vinegar
Instructions
- In a medium bowl, mash the blackberries with the sugar and let sit for 1.5 hours.
- Strain the mixture through a fine sieve into a clean bowl, pressing on the fruit to extract as much liquid as possible.
- Stir in the balsamic vinegar and pour the syrup into a bottle or jar, then refrigerate. The syrup can be kept in the fridge for up to two months.
- Combine rum and shrub syrup in an ice-filled Collins glass.
- Top with club soda and stir gently to combine.
