Ingredients

  • 2 oz. dark rum
  • 1/2 oz. blackberry shrub syrup
  • Club soda
  • 2 cups blackberries
  • 1 cup sugar
  • 2 tbsp. balsamic vinegar

Instructions

  1. In a medium bowl, mash the blackberries with the sugar and let sit for 1.5 hours.
  2. Strain the mixture through a fine sieve into a clean bowl, pressing on the fruit to extract as much liquid as possible.
  3. Stir in the balsamic vinegar and pour the syrup into a bottle or jar, then refrigerate. The syrup can be kept in the fridge for up to two months.
  4. Combine rum and shrub syrup in an ice-filled Collins glass.
  5. Top with club soda and stir gently to combine.
