Ingredients
- 1.50 cups water
- 3/4 cup granulated sugar
- 3 inches long piece fresh ginger, peeled, thinly sliced
- 1 lemon, peeled with vegetable peeler, juiced
- Pinch of sea salt
- 1/2 cup fresh raspberries
- 1/2 cup fresh blackberries
- 1/2 cup fresh blueberries
- 1.50 oz dark rum
- About 1 cup ice cubes
- Handful of fresh mint leaves
Instructions
- In a medium saucepan, combine water, sugar, ginger, lemon peel, and juice, and salt. Bring to a boil, then simmer for 5 minutes until the syrup thickens slightly and is infused with ginger and lemon. Set aside to cool.
- Strain the syrup into a small bowl and discard the solids. Refrigerate for up to 1 week.
- In a blender, combine the berries, rum, and 1 cup of ginger syrup; blend on high speed for 15 seconds until well blended.
- Fill a glass halfway with ice. Add the berry mixture and mint, stir well, and serve immediately.
