Ingredients

  • 3.20 oz mixed berries (raspberries, strawberries, blueberries, red currants, blackberries)
  • 1 oz ginger
  • 1.30 cups brown sugar
  • 6.80 fl oz pomegranate juice (unsweetened)
  • Juice of 1 lemon
  • 4 tsp rooibos tea
  • 2.10 cups water
  • Some peppermint leaves

Instructions

  1. Rinse the berries and place them in a large pot.
  2. Grate the ginger, and add lemon juice, sugar, and pomegranate juice.
  3. Bring the mixture to a boil, then let it simmer for 10 minutes without a cover.
  4. Allow the syrup to cool down, then filter it and pour it into a bottle to refrigerate.
  5. Prepare the tea by boiling 2.1 cups of water, removing it from heat, and adding the rooibos tea. Let it steep for 5 minutes, then filter and cool.
  6. Add the desired amount of berry syrup to a glass of tea, stir, and refrigerate.
  7. Serve with ice cubes and garnish with pieces of strawberries, red currants, and mint leaves.
